Salmon Patties

I don't care too much for leftover fish. Especially salmon, it tends to taste more fishy the next day. But, in the rare case you find yourself needing to do something with the leftovers, this recipe is great. Salmon, cod, shrimp -- you can try this recipe with any of these. My first go-to recipe blog is Simply Recipes and I found this great sounding salmon patty recipe. I added a little flair of my own and created an easy, tasty, and delicious meal for us. Enjoy.

1/2 to 1 lb. leftover salmon, flaked
2 slices of bread, shredded
4 Tbsp chopped green onion, including the green parts
1 medium garlic clove, minced
1 Tbsp fresh chopped dill weed, or 1 teaspoon dried
1 small red bell pepper, minced
1/2 cup corn (I used leftover corn on the cob, but canned is fine too. Drained.)
1 Tbsp flour
1 egg
1/2 teaspoon paprika
1/2 teaspoon Old Bay
1 Tbsp Worcestershire sauce
1 teaspoon salt
Several turns of freshly ground black pepper
Dash of Tabasco?
3 Tbsp vegetable oil

In a large bowl, gently mix together all the above ingredients except the vegetable oil. Form into 8 patties; each about 1/2 inch thick.

Heat oil over medium high heat in a large skillet. Cook the patties until nicely browned on both sides, about 3-4 minutes per side.

Serves 4.
