Thai Beef Stir-Fry

I saw this on Self.com today.  It seems too easy and delicious to be true.  Not to mention that this single serving below is only 310 calories!!

Beef
  • 3 oz beef tenderloin
  • ¼ cup soy sauce
  • ½ teaspoon red pepper flakes
  • 1 tablespoon cilantro
  • ¼ cup olive oil
  • ½ tablespoon brown sugar
Stir-Fry
  • ¼ green onion (chopped)
  • 4 broccoli florets
  • 4 slices yellow peppers
  • 1/8 cup bean sprouts
  • 8 snow peas
  • ¼ celery stick (sliced)
  • 2 cherry tomatoes
  • 3 shiitake mushrooms (sliced)
  • salt and pepper to taste
Combine beef marinade in a non-reactive bowl, add beef and marinate for 2 hours. Grill (marking on both sides) and let cool for 10 minutes. Slice steak into ½-inch slices. Sauté vegetables together. Add steak to grilled vegetables and serve.
