Quick Baked Lamb Meatballs

Lamb meatballs make for an easy, delicious, and nutricious weeknight meal. Serve over orzo with some fresh cucumbers tomatoes and top with a sprinkle of feta. Mmmmmm.

- 1 lb ground lamb
- 1 Tbsp Greek yogurt
- 1/4 cup chopped fresh cilantro
- 1 Tbsp fresh minced garlic
- 1 tsp salt
- 1 tsp cumin
- 1 tsp onion powder
- 1/2 tsp pepper

1. Preheat oven to 400*F and line baking sheet with parchment paper.
2. In a bowl, mix together the ground lamb, Greek yogurt, cilantro, garlic, salt, cumin, onion powder, and pepper until well combined.
3. Roll the mixture into small to medium balls, yielding around 8-10 meatballs.
4. Place the meatballs on the prepared baking sheet and bake for 15-20 minutes,
5. Serve the meatballs over orzo with a cucumber/tomato salad and a sprinkle of feta.
